Introduction

Number of Servings: 12

Ingredients

    Chicken Broth - 48 oz
    Celery - 4 cups chopped
    Onions - 2 cups chopped
    Carrots - 1 cup shredded
    1 Rotiserrie Chicken (Kroger)
    Grapeseed Oil - 3 tbs
    1 can sweet corn
    Garlic - 2 tbs (minced)

    Optional:
    Fresh parsley
    Oregano
    Lemon Pepper
    Cayenne Pepper

Directions

Chop veggies and saute' over medium heat with grapeseed oil & 2 tbs minced Garlic about 6-8 minutes. Add salt & pepper to taste.

Add chicken (I buy a rotisserie chicken from Kroger and use the dark and light meat - no skin) and broth.

Simmer covered over Low/Medium heat for 25 minutes.

Optional: Lemon Pepper, Oregeno, Fresh Parsely, Cayenne Pepper (pinch) -- add in before simmering

Serving Size: Makes 12 (1 cup) Servings
