1 Acorn Squash
12 oz lean ground beef (96%)
1 cup mixed frozen vegetables
Directions
Cut squash in half and clean out the seeds. Roast in oven at 450 degrees for 35 minutes. About 10 minutes before the squash is done, start to brown the ground beef. Take squash out of the oven, scoop away from the skin and mash it (seasoning as desired.) Place ground beef in a bowl with the mixed vegetables and mix them together with your selected seasonings. In a 6" pie plate, place a layer of the squash on the bottom. Take 1/3 of the beef and vegetable mixture and layer above the squash. Make a top layer with the squash. Repeat for the other two pans. Cook in oven at 350 for 25-30 minutes.
