    2.5 Cups Corn, frozen (thawed)
    2 can's Chickpeas (drained and rinsed)
    3 cups cherry tomato's, quartered
    1 green pepper, diced
    1 small red pepper, diced
    1 cucmber, chopped

    Dressing:
    3/4 Cup extra virgin olive oil
    1/4 Cup fresh cilantro, chopped
    4 TBSP. lime juice
    1 clove garlic, minced
    1tsp. salt
    1/2 tsp. pepper

Directions

mix dressing, combine rest of ingredients, pour dressing over veggie mix.
