Ingredients

    Lukewarm water, 1 cup
    Active Dry Yeast, 3/4 Tbsp
    Kosher Salt, 1/5 Tbsp
    Milk, 1%, lukewarm, 1/2 cup
    Maple Syrup, 1/4 cup
    Vegetable Oil, 2 tbsp
    Oat Bran, 1/4 cup
    Wheat bran, 1/4 cup
    Trader Joe's Rolled Oats, 3/4 cup
    Whole Wheat Flour, 1-1/2 cup
    All Purpose flour, 1-1/2 cup
    Vital wheat gluten, 3 Tbsp

Tips

From start-to-finish you will need about 3 to 3-1/2 hours to make the bread, to allow for rising time.


Directions

Mix yeast and salt with the water, then mix in remaining liquids. Stir in remaining dry ingredients, do not knead. Cover (not airtight) and allow to rise and collapse (flatten on top) at room temperature, about 2 hours.

Lightly grease 9x4x3 inch bread pan. Form dough into a ball by stretching the surface of the ball around to the bottom four times, rotating a quarter turn after each. Elongate ball into a cylinder and place in bread pan. Allow to rest for 40-60 minutes, until it rises somewhat above the top of the pan and is a little "wobbly" when gently poked with a finger.

20 minutes before baking, preheat oven (preferably with baking stone) to 350 degrees F, and place an empty broiler pan on the bottom rack. When it's time to bake, place bread pan on rack above the broiler pan near center of the oven, pour a cup of hot water into the broiler pan, and quickly close the oven. Bake about 40-50 minutes, until deep brown and firm. Cool before slicing.
