Ingredients
-
Jimmy Dean Sage Sausage (loose)- 8 oz
1 Sweet Onion chopped
1 Green Bell Pepper chopped
1/2 cup Salsa
1 Can Chickpeas- 15.5 oz or 1.75 cups
1 Sweet Sweet Potato- baked
Season with cumin, smoked paprika, and cayenne to taste.
Tips
I like my seasonings assertive and went with about 1/2 Tbsp cumin, 1/2 tsp smoked paprika, and a generous dash of cayenne.
You can do some of the prep as you cook. I started the sausage browning while I chopped the pepper, added pepper, and then chopped onion.
While it might not look like much, it was just what I wanted for breakfast. I think this could go for really any meal of the day...
Directions
Cook sausage, onions, and peppers together over medium heat in a medium skillet until sausage is browned and onions are translucent.
Add salsa. Drain chickpeas ad add to skillet; continue to simmer. Add cumin, smoked paprika, and cayenne.
Dice sweet potato and toss into pan (including skin!).
Mix together. Adjust seasoning.
