Yummy easy dressing for salads! Yummy easy dressing for salads!
Number of Servings: 6


    1/2 cup carrots, peeled and chooped
    1/2 medium shallot, chopped
    1 tablespoon plus 1 1/2 teaspoon finely chopped ginger
    2 tablespoons ricevinegar
    2 teaspoons toasted sesame oil
    2 teaspoons Tamari soy sauce
    1 tbsp lemon juice
    1 teaspoon sugar
    1 tablespoon extra light olive oil
    1/2 tsp grated garlic


Chop up carrots, ginger and shallots. Add to food precessor and pulse till fine. Add remaining ingredients except for olive oil. Pulse till it gets really fine. Then turn on food processor again and drizzle in olive oil. Chill and serve over salad! Enjoy!

Serving Size: makes 6 1tbsp sevings
