Ingredients

    4 Boneless Skinless Chicken Breasts
    1 Box Zataran's Yellow Rice
    1 Onion - Chopped
    1 - 2 Cans Corn (Drained)
    1 Can Black Beans (Drained)
    1 Pkg. Shredded Cheddar Cheese
    1 Can Cream of Chicken
    1 Can Rotel

Tips

I added an extra can of corn because I like corn. This is oprtional.


Directions

Place chicken in bottom of crock-pot. Dice onion and place on chicken. Spoon cream of chicken soup (as is) over chicken breasts. Cover and cook on Low for 7-8 hours, (or on High for 3-4 hours). Shred cooken chicken and stir. Add cooked rice, corn, beans, rotel, and cheese to chicken, and stir. Let sit for 5 min to allow cheese to melt.

Serve, and enjoy.
