Ingredients

    2.5 cups cubed, pealed russet potatoes
    2 TB salted butter
    1/4 cup 2% milk
    1 tsp salt
    2 cups whole wheat pastry flour (plus 3/4 cup for rolling out dough)


Tips

These make excellent wraps, as well as being good all by themselves jam, honey, etc. I refrigerate them and reheat on a griddle or serve them cold as a wrap.


Directions

1. Boil Potato until tender. Drain well and return to pan and stir over low heat, a few minutes, to dry the potatoes, being careful not to brown them

2. Mash potatoes thoroughly and put in mixing bowl

3. Add remaining ingredients, except flour for rolling dough, mix well till forming a non-sticky dough

4. Knead and form into a smooth log. Divide into 24 pieces

5. Roll each piece into a thin circle, like a tortilla, turning and dusting with flour to prevent sticking

6. Cook on hot griddle til bubbled up portions are lightly browned, flipping once

7. cool on wire rack

Serving Size: make 24 eight inch pieces, roughly
