Ingredients

1 bunch of rainbow chard
2 cups fresh spinach
1/2 cup chopped scallions
1 tbsp olive oil
2 ounces feta cheese
Tips
* Skip the feta to make this dish vegan.
* Add a squirt of lemon juice for a pop of flavor.
Directions
Cut center ribs away from the leaves of the rainbow chard. Separate into two piles. Slice the ribs into approximately 1/2" servings and set aside. Roll the leaves together and slice through horizontally, creating a chiffonade (ribbon-like pieces) and toss with the spinach.
Heat the 1 tbsp of olive oil in a large saute pan until it shimmers and runs around the pan like water. Reduce heat to medium, add the chopped scallion and cook, 2-3 minutes. Add chard leaves and spinach, tossing to coat them in olive oil and let them wilt, about 3 minutes before adding the chopped colored ribs. Saute over medium heat for a further two minutes and remove from heat. Toss with feta and serve immediately.
