Ingredients

    Fresh Spinach - 1.5 bags/9 cups
    Walnuts - 1/2 cup
    Garlic - 5 gloves (give or take to taste)
    Dried Basil - 1/2 cup
    Olive Oil - 3/4 cup
    Salt - 4 tsp
    Pepper - 4 tsp

Tips

Just a little bit of this pesto goes a long way. 1-2 tbsps goes with a serving of pasta.


Directions

Chop up all ingredients in a blender or food processor till smooth. Adjust salt and pepper to taste - don't be afraid to taste as you go!

If you're using unshelled whole walnuts, it's best to pulse these a few times in the blender/processor first.

Then, the whole garlic cloves can use some pulsing.

Add a handful of spinach at time with a small portion of the olive oil, blend, and repeat.

Stir between intervals to make sure unblended parts get to the blades. This makes it easier to blend smooth (unlike attempting to blend it all with everything dumped in at once).

Toss with pasta, chicken, or whatever your heart desires! Toss in a few chopped sundried tomatoes for an extra kick.

Serving Size: Makes about 2.5 cups
