Ingredients

2 Tbsp Butter, melted
3 eggs
1/2 cup whole wheat flour
1/2 cup soymilk
1/4 tsp salt

3 large cooking apples, cored and thinly sliced
3/4 cup water
1/3 cup raisins
2 Tbsp Sugar
1/4 tsp cinnammon
2 Tbsp Cornstarch
Directions
Heat oven to 400. Place small amount of butter in an oven safe pan. Place pan in oven until butter is melted.
Beat eggs. Add soymilk, salt and mix well. Slowly add 1/2 flour mix well. Add Butter. Add remaining flour, mix until smooth. Place in oven 25 min or until golden brown.
SAUCE
Place apples, water, raisins, sugar and cinnammon in sauce pot. Simmer covered until apples are tender. Mix 2 Tbsp cornstarch and 2 Tbsp of water. Add to apple mixture. Stir until thickened. Remove from heat.
Place sauce on puff pancake, slice and serve.
