Ingredients

    4 Tilapia fish fillets (or other firm-fleshed fish fillets)
    1/3 cup red wine
    1/3 cup orange juice
    1/3 cup lemon juice
    4 Tbsp chopped fresh cilantro (reserve 2 Tbsp of the cilantro)
    4 Tbsp chopped scallions (reserve 2 Tbsp of the scallions)
    1/2 tsp dried oregano
    1 tsp ground cumin
    1/4 tsp crushed red pepper flakes (or less, depending on your heat tolerance)

Directions

Place all ingredients (except the reserved chopped cilantro and green onions) in a large ziploc bag; seal bag and turn to coat well. Refridgerate for at least 1 hour, but no longer then 12 hours. Preheat grill, oven broiler or skillet. Remove fish from marinade, discarding marinade and plastic bag.l Grill fish, uncovered, for 3 to 6 minutes per side, turning until cooked thoroughly. Serve fish topped with reserved chopped cilantro and green onions.

    I did not grill this and may be I sauted this a little too long but it was dry. We made an orange sauce with fresh juice and some cream in the bottom of the saute pan. This helped. The flavor overall was good. - 10/30/10
