Ingredients

    4 medium potatoes
    1/4 c milk
    1/4 c grated cheddar cheese
    1 TBS finely chopped onion

    1 TBS olive oil
    2 c chopped onion
    1 garlic clove finely chopped
    1 c chopped raw carrots
    1 pound lean ground beef
    1 tsp dry basil
    1 c frozen peas
    3/4 c beef boullion
    1 tbs ketchup

Tips

If the potatoes have not browned after 20 minutes, then place the dish under broiler to brown the potatoes.


Directions

Prepare 4 potatoes and boil for 15 minutes. Drain the water and mash them with milk, cheese, and finely chopped onion. Set this mixture aside and prepare the meat.
In one Tablespoon of olive oil, fry the chopped onion and garlic for 5 minutes. Add the chopped raw carrots, ground beef, and basil. Stir this while cookiing to break up the ground beef in small pieces. When meat and carrots are cooked, add frozen peas, beef boullion, and ketchup. Cook this mixture, stirring often until nearly dry. Pour the meat mixture into a 2.5 quart dish. Level across the dish then spoon mash potatoes onto the meat mixture to make topping. Bake for 20 minutes.
