Introduction

I modified this into a lowfat low carb breakfast main dish. It is great for leftovers as well. Garnish with fresh tomatoes, salsa and fresh cilantro. I modified this into a lowfat low carb breakfast main dish. It is great for leftovers as well. Garnish with fresh tomatoes, salsa and fresh cilantro.

Ingredients

    2 7oz cans of roasted whole green chiles (8 whole)
    8 wedges of Laughing Cow Light Queso Fresco & Chipotle Cheese
    3 eggs
    3 egg white
    1 T flour


Directions

Preheat oven to 375. Spray a 8X8 or 9X9 baking dish with nonstick spray. Arrange the whole green chiles in one layer in the baking dash. Insert a wedge of cheese into each chile and press down lightly. Beat the eggs and egg white with the flour and pour over the top evenly. Bake for 30-40 minutes until knife comes out clean.

Serving Size: Makes 4 servings-approximately two chiles each
