Ingredients

    6 oz Ham
    1.5 T Olive Oil
    1/2 Small Onion
    6 oz Frozen Peas
    10 oz Pasta
    2 Large Eggs
    1 c Parmesan Cheese
    4 cloves Garlic
    1.5 t Black Pepper

Tips

See the video listed in the Description to watch a pro (not me) explain how it works. I just changed it up to use ingredients on hand and to taste.


Directions

Boil 2 quarts water - add pasta.

Toast ham, onion, and garlic in oil with some pepper - add peas and remove from heat or turn way down.

Whisk eggs and half of cheese with more pepper.

When pasta is done:
Add 1.5 c pasta water to ham mixture.
Drain pasta and add pasta to ham mixture.
Slowly add egg mixture to ham mixture, stirring constantly. The hot mixture will cook the eggs, making a creamy sauce in a couple of minutes.

Check to see if you added enough pepper.

Top with remaining cheese.
