Ingredients

    ¨ù teaspoon salt
    ¨û teaspoon dried oregano
    ¨û teaspoon dried thyme
    ¨û teaspoon pepper
    2 small cloves garlic, minced
    ¨ú lb pork tenderloin
    2 tablespoons Dijon mustard
    2 teaspoons olive oil
    2 dashes hot sauce

Directions

combine salt, oregano, thyme, pepper and
garlic. Rub pork with spice mixture. Combine
Dijon mustard, oil and hot sauce in a small
bowl. Brush pork evenly with half of Dijon
mixture. Place on a roasting pan; bake 15
minutes. Baste with remaining mustard mixture.
Bake 10 to 20 minutes longer or until
thermometer reads 145 degrees. Let stand 3
minutes before slicing.
