Introduction

Ingredients

    6 lbs of strawberries, washed and hulled
    2 cups raw honey
    2 TBSP lemon juice
    3 TBSP Kosher gelatin
    1/3 cup cold filtered water

Tips

Add in other fruits for more variety. Try adding Kiwi, mangoes, bananas for other berries! May need to change the amount of honey depending on the sweetness of fruit and personal preference.


Directions

Bloom gelatin in water. Smash strawberries in a large pot with a potato smasher. Place on stove over medium heat and add honey. Stir until honey melts. Bring to a light boil and add gelatin then reduce to a simmer for about 10 minutes, stirring occasionally, or until it is the consistency you prefer. Add in lemon juice. (for a smooth jam, blend in a blender or food processor, be careful it's hot!) Pour into clean containers (tupperware, glass jars, anything that has a lid) and put on lids. Place in fridge until cooled then transfer to freezer. When ready to use, keep in fridge. Will last about 1 month once opened.
