Ingredients

2 cans cannellini white beans, drained
1 large sweet potato, baked/peeled/mashed (about 2 cups)
2 tsp maple or agave syrup
1 tsp lemon pepper seasoning OR Cajun seasoning (or another fave spice!)
1/4 cup wheat flour
2 Tbs. tahini (optional)
1 Tbs. chia seeds+3Tbs. water (let sit 15 min)
optional: additional seasoning (whatever you have on hand - I used a few dashes cayenne or chipotle
salt to taste if needed
plentiful Panko crumbs
canola oil for the pan (1 Tbs.)
avocado, Dijon mustard, grain buns, romaine, onion
Tips
These are soft but yummy.
Directions
Bake sweet potato, let cool and peel. Mash beans, potato, agave syrup, lemon pepper, flour and hydrated chia seeds. If using stir in salt, pepper or whatever strikes your fancy.
If it's too moist, add a little more flour. Dredge in panko crumbs. Heat 1 Tbs. canola oil and fry on each side about 4 min. on med-high heat.
Serve on whole wheat hamburger buns with sliced avocado, romaine, onion, dijon. Mayo if you'd like.
