Introduction

I use the chuchu (chayote) to add veggie count without so many carbs as potatoes. I use the chuchu (chayote) to add veggie count without so many carbs as potatoes.

Ingredients

    3 cups potatoes peeled, and cubed
    2 cups chuchu (chayote) peeled and cubed
    1 cup carrots diced
    1 cup canned corn
    1 TBLS olive oil
    3 cloves garlic
    1 TBLS raw onion
    1 cup light maionese

Tips

I steam veggies together but layer potatoes, carrots and chuchu last since it cooks the fastest.


Directions

Steam potatoes, carrots and chuchu. Allow to cool completely. Brown chopped garlic in olive oil. Add to the steamed veggies with 1 can corn, Tbls raw onion, and 1 cup light maionese.

Serving Size: makes 6 1 cup servings
