Ingredients

    5 Cups lentils
    3 Quarts Water
    1 Large onion chopped
    3/4 leek chopped
    2 tbsp extra virgin olive oil
    1 green bell pepper
    1 tsp celtic salt
    1 tsp cumin
    1 cup freshly chopped cilantro
    5 Garlic cloves minced
    1/2 cup fresh lime juice

Tips

this is a very bland soup and is not spicy at all


Directions

put the lentils and water in a large sauce pan on high heat and bring to a boil reduce the heat and let simmer while preparing other food. use half the olive oil and saute onion on medium heat for 8 minutes than add the bell pepper and leek for another two minutes add the onion mixture to the lentils simmer for 30 minutes season accordingly and simmer for 20 more minutes add the cilantro and remove from heat combine the garlic lime juice and remaining olive oil in a blender or food processor blend well mix in to the soup and serve
