Ingredients

✤ 1 LARGE CUCUMBER
✤ 1/2 LARGE SWEET ONION
✤ 1/2 C WHITE VINEGAR
✤ 2 TBSP APPLE CIDER VINEGAR
✤ 1/3 C WATER
✤ 1/4 C SUGAR SUBSTITUTE (IDEAL)
✤ MRS DASH TABLE BLEND
✤ BLACK PEPPER, COARSE
Directions
✤ Peel cucumber in alternating strips, leaving a "striped" appearance (optional, but looks pretty). Cut cucumber in half and scoop out seeds w/spoon (unless using a seedless variety). Slice to desired thickness. You should have approximately 8 oz of cucumber slices.
✤ Cut onion into quarters and thinly slice approximately two quarters of the onion. you should have approximately 4 oz of cucumber.
✤ Combine cucumber and onion slices and season w/Mrs Dash and black peppers (or other desired seasonings). Place seasoned cucumber/onion slices into jar or container (must have a lid).
✤ Combine both vinegars, water, and sugar substitute (I used Ideal/xylitol, but another substitute could be used or sugar could be substituted) in small pan and bring to boil. Pour liquid into jar w/cucumber/onion slices.
✤ Allow liquid to cool, place lid on jar and shake to combine. Place in fridge for at least one hour.
✤ Drain liquid before serving. Liquid can be saved for a future batch and reheated before adding to cucumber/onion slices.
Serving Size: Makes approximately four 1/2 cup servings.
