    1/2 cup coconut flour
    6 Large Eggs
    1tsp salt
    1tsp baking soda
    1 T poppy seeds
    1/2 cup coconut oil melted (or olive oil)
    1/2 cup honey or agave nectar
    2 T lemon zest
    1 T lemon juice

    Mix dry ingredients in small bowl. Mix eggs, oil, honey, lemon zest and lemon juice in larger bowl. Add dry ingredients to egg mixture. Fill muffin cups about 3/4 full. Should yield 12 muffins.


Bake at 350 degrees for 30 minutes
