    American Cheese


Add spinach, tomatoes, mushrooms, etc. Also your favorite cheeses.


Spray muffin tin with Pam. Set aside. Chop onion and broccoli as desired. Place this mixture into the muffin tins filling 3/4 full. Break american cheese (or your choice of cheese) and place atop of broccoli/onion. Using all egg whites except 3 egg yolks, beat eggs until slightly fluffy. Add sea salt and fresh pepper. Pour this mixture over the broccoli and onion in tins. This mixture should just slightly start to cover the broccoli, onion and cheese. Place in oven and bake at 350 degrees for 30 minutes until golden. Serve warm. Store in zip lock bags for easy travel to work. Quick warm up in microwave in 20 seconds.
