Ingredients

    1 tbsp olive oil
    1 cup onions, diced
    1 large garlic clove, minced
    1.5 cups dry white wine
    1 tbsp water (optional)
    1 tsp corn starch (optional)
    2 lb fresh mussels, scrubbed and debearded
    4 sprigs parsley, finely chopped
    salt
    pepper

Directions

Heat oil in large pot over med/high heat. Add onion and cook for 3 minutes, stirring occasionally. Add garlic and cook for 1 minute. Add wine. Bring to boil, then simmer for 5 minutes.

If you'd like a slightly thicker sauce, mix the water and corn starch, then add to wine. Otherwise, just add salt and pepper to taste. Bring to boil. Add mussels, cover pot, and cook for 5 minutes (or until mussels open). Remove from heat. Add parsley, cover and shake once. Pour into serving bowl. Discard any mussels which aren't open.

Serve with freshly roasted garlic (sprinkled with sea salt) and baguette slices.
