Ingredients

    1/4 cup tapioca pearls
    2 cups water, divided
    1 dry pint of fresh berries
    1/2 cup sugar
    1 tbsp vanilla

Directions

Soak tapioca pearls in 1/4 cup water for 10 min. Wash, stem and chop berries. Bring 1 3/4 cup water and berries to boil. Add soaked Tapioca and remaining ingredients and reduce heat to low. Stir frequently until most of the Tapioca Pearls have turned completely translucent. Remove from heat and allow to cool. Serve warm or cold.

    Very Good
    I thought that this was very tasty. My husband liked even more than I did. I substituted honey for the sugar, used frozen blueberries, and added a dash of cinnamon. It looked gorgeous garnished with walnuts. Thanks! - 3/17/08
