Introduction

preheat oven to 325, grease 8x4 loaf pan. beat together zucchini, carrots, sugar, honey, and egg. in another bowl mix dry ingredients and lemon zest. Slowly add the dry ingredients to the zucchini mixture, add walnuts. pour batter in loaf pans. Bake for about 55 minutes.     1 1/2 cups shredded zucchini
    1/2 c brown sugar
    1/4 cup honey
    1 egg
    1 cup shredded carrots
    1/2 cup walnuts
    1/2 teaspoon salt
    1/2 teaspoon baking soda
    1/4 teaspoon baking powder
    1 teaspoon cinnamon
    2 teaspoons lemon zest

Tips

you can also mix 1/2 cup sugar and 1/4 cup lemon juice in a small pan and bring to boil. brush over bread as cooling for extra lemon flavor.

bake 55 minutes at 325 degrees
