Ingredients

    1 Package Jennie-O Extra Lean Ground Turkey
    1 Cup Chopped Onion
    1 Cup Black Beans
    10 Wheat Mission Carb Balance Fajita Sized Tortillas
    8 Oz Shredded 2% Colby Jack Cheese
    1/2 Jar Pace Picante Mild Salsa
    15 Tbsp Fat Free Sour Cream
    15 Tbsp Ortega Green Mild Taco Sauce
    Season Salt and Fresh Cilantro (if desired)

Directions

Combine turkey, onion, cilantro, and season salt in a large skillet and cook until done.


Mix black beans and approx 5 Tbsp salsa into turkey mixture.


Fill tortillas with mixture and place in 9x13 glass baking dish. Cover with remaining salsa and meat mixture and top with cheese.


Bake at 375 for 10 minutes.


Serve with 1.5 Tbsp fat free sour cream, 1.5 Tbsp Ortega green taco sauce, and 1/4 cup diced tomatoes (all included in the nutritional info above).

    We all enjoyed this very much. I did add some diced tomatoes with mild green chilies to the filling. I also added some cumin. They were delightful and I am looking forward to leftovers and making them again. - 8/26/11

    Good. I aded a can of diced tomatoes and Healthy Request cream of soup and layered the tortillas instead of rolling the mixture in them. - 7/1/08

    Incredible!
    This was great my husband couldn't get enough. I made one change which was I used taco seasoning instead of seasoning salt. This was quick easy and flavorful. Thanks - 6/25/08
