Introduction

My family really loves this! We cook the entire box of pasta and divide it 7 ways as the box says that's how many it serves. My family really loves this! We cook the entire box of pasta and divide it 7 ways as the box says that's how many it serves.

Ingredients

    1 box (13.25 oz) Whole Wheat Rotini
    1 can (14.5 oz) Diced Tomatoes
    10 sticks Light Cheese Head Mozzarella sticks, chunked
    4 Tbs Extra Virgin Olive Oil
    1 lemon, juiced


Tips

If desired, fresh grape tomatoes can replace the canned tomato. We do it both ways according to the budget!


Directions

Boil pasta in salted water until tender. Drain. Chunk mozzarella sticks while pasta boils. Once pasta is done, drain and place in serving dish. Immediately add tomatoes and mozzarella. Toss to incorporate. Drizzle Olive oil and lemon over the top.
