Ingredients

    2 peeled cucumbers sliced very thinly
    Slice 1 large onion very thinly
    Cherry tomatoes optional (not included in nutrition information)
    1/4 cup cider vinegar
    1/4 cup white vinegar
    1 Tablespoon olive oil
    2 Tablespoons sugar
    1/2 t salt
    pinch of pepper

Tips

If I will be storing this more than one day, I typically turn the container upside down every other day so make sure all the juices don't settle.


Directions

In a bowl mix both vinegars, the olive oil, sugar, salt and pepper. Blend in the cucumber and onion. Store in an air tight container in refrigerator. Adjust amounts for taste and size of cucumber.
