    2 lg eggs
    1/4 c half and half or heavy cream
    2 T flaxseed meal
    1/2 t cinnamon
    1/2 t vanilla extract
    stevia (or other calorie-free sweetener)


If beaten egg whites are folded in to the egg mixture, the result will be fluffy pancake-like. Usually I just beat all the ingredients in the same bowl and pour into pan. The taste is the same but the texture is more dense. Either way, it's delicious!


Beat ingredients together with a whisk. If you're feeling really fancy, whip egg whites separately and fold into beaten egg mix. Melt butter in skillet over medium high heat. Turn heat down to medium low. As soon as the mixture is "set", flip and cook until done to your tastes.
