Ingredients

3 Medium Tomatoes
1/2 a small onion
1 chilli pepper
1tsp dried coriander leaf
lime juice (from one wedge)
small splash of water.
Tips
I like a fairly mild heat (because I have a young child who likes to share) so I only add one chilli and I usually de-seed it. Though if you don't want to add chillies then you could use a sweet pepper instead or just leave it out.
Directions
Finely dice the tomatoes, onion and chilli pepper (de-seed if you want) and combine in a small bowl.
Add the coriander, lime juice and a little water and stir.
Serve straight away - though this will keep in the fridge if you want to make it ahead of time.
