Ingredients

    Meatballs:

    1lb. lean ground beef
    2 egg whites
    1/4 cup flour
    1/2 tsp salt
    1/4 tsp ground black pepper
    1/4 cup fat free cheddar cheese, shredded
    1 tsp ground cumin
    1 tsp garlic powder
    3 Tbsp prepared salsa
    1 Tbsp pickled jalapenos, chopped

    Topping:

    1/4 cup prepared salsa
    1/4 cup fat free cheddar cheese, shredded
    16 jalapeno slices
    2 Tbsp nonfat Greek yogurt

Directions

Meatballs:

1. Preheat oven to 375 degrees.

2. Combine all of the meatball ingredients in a medium bowl and mix thoroughly. Form into 16 balls.

3. Bake in preheated oven for 25 - 30 minutes or until cooked through. Remove and set aside.

To Serve:

1. Arrange the meatballs on an ovenproof dish. Top with about 1 tsp salsa, and 1 tsp shredded cheddar each.

2. Place under the high broiler for about one minute or until the cheese is melted.

3. Remove from the oven, top each meatball with a dab of yogurt and a slice of jalapeno.

Serving Size: Makes 16 meatballs
