Ingredients

    2 c Frozen shelled edamame
    1 1/2 c frozen corn, thawed
    1 1/2 c mango cubes, thawed
    1 c chopped tomato
    1/2 c chopped red onion
    1 T extra virgin olive oil
    1 T lime juice
    3/4 t salt
    1/4 pepper

Tips

put in refrigerator for at least 30 mins to allow flavor to come together


Directions

Cook the edamame according to the package. Rinse under cold water. Transfer to large bowl.

Stir in corn, mango, tomato, onion, oil, lime juice, add salt and pepper. Toss well
