Ingredients

Whole, peeled tomotoes in a can (1 28 oz can), preferbaly plum, unseasoned
One third cup of olive oil--the best you have, can reduce this if you like
2 tbsp basil, dired, ground or a big handlful to taste if fresh, torn
1 tbsp oregano
2 tsp salt
1 tsp pepper (or to taste)
2 tsp sugar (it reduces the acidity)
Tips
If for pasta reverse the amounts of oregano and basil. You can also add Italian heerb seasoning for a pasta sauce.
For pizza, spread on fresh dough, cover with fresh parmesan and toppings of choice and cook at 350F unitl browned on the bottom.
Directions
Add tomatoes to a bowl, crush with your hands until small chunks only and remove the hard bits.
Add to a pot and add remaining ingredients.
bring to a bowl and simmer until volume reduces to about half. Freeze or use right away.
Can be refrigerated for a few days before using.
