Ingredients

    1 pound skinless, boneless chicken breast halves, pounded to 1/4" thickness
    2 tablespoons real bacon bits
    2 cups fresh baby spinach, chopped
    3/4 cup crumbled blue cheese
    1/4 cup fat free cream cheese
    1/8 teaspoon ground black pepper
    1/4 teaspoon salt
    cooking spray

Directions

1. Preheat the oven to 350 degrees F.

2. In a medium bowl, stir together the spinach, bacon and blue cheese.

3. Lay the chicken breast halves out on a clean surface, and distribute the spinach mixture evenly down the center. Fold the chicken over the filling, and secure with toothpicks.

4. Stir together the flour, salt and pepper on a dinner plate. Roll the chicken in the flour to coat.

5. Place in a lightly sprayed baking dish, and cover with aluminum foil.

6. Bake for 35-40 minutes in the preheated oven, until chicken juices run clear, and filling is hot.

7. Uncover chicken. Turn broiler to high. Sprinkle chicken rolls with a few crumbles blue cheese and spray lightly with cooking spray. Broil just until cheese is bubbly and chicken has browned. Serve immediately.

    Incredible!
    I have "tweaked" this recipe.. but the filling is delish..Instead of adding Blue Cheese- I did Parmesan Cheese..In the directions, the cream cheese was forgotten, so I added it to the other cheese, bacon bits and spinach... I actually haven't "tried" it yet- as it is cooking now. it's for dinner - 5/2/18
