I found this online and made it with less sugar and butter and it was still to die for. It serves 8...but only if each person is having between half a cup and 3/4 of a cup each. Ingredients


    Potatoes:
    Sweet potatoes 4 cup/ 2 lbs
    Trader Joe's Organic Sugar, Evaporated Cane Juice, 24 tsp/ 1/2 cup
    Land O Lakes 2% Milk, 2 oz
    Butter, salted or unsalted, 2 tbsp melted
    Salt, .5 tsp
    Vanilla extract, imitation, alcohol, 1 tsp
    2 large eggs

    Topping:
    Whole Wheat Flour, 0.3 cup
    Trader Joe's Organic Brown Sugar, 1/2 cup
    Salt, 1 dash or 1/8 tsp
    Butter, unsalted, 2 tbsp melted
    Pecans, .5 cup, chopped

Directions

Preheat oven to 350F.
Mash sweet potatoes and mix all ingredients under potatoes. Place in greased 9X13 pan.

Mix all topping ingredients in a separate bowl and and layer on top of potatoes.

Bake for 25 to 30 mins. Broil for 1 minute if you want a crunchier topping.

Serving Size: Makes 8 1/2 - 3/4 cup servings
