Ingredients

1.5 cups split green peas, dried
1 can (10.75 oz.) chicken broth
1 can water
1 cup chopped carrots
1 cup chopped yellow onion
1 tsp. thyme
1 tsp. crumbled bay leaf
1 tsp. coarse sea salt
1 tsp. coarse ground black pepper
Directions
Brown carrots and onions in a saucepan with a little oil until soft, about 8-10 minutes. Then add all other ingredients and bring to a boil. Reduce heat, cover and simmer for 1 hour. Pour into a blender or food processor and gently pulse until creamy. Add water if soup is too thick, but it should be nice and thick. Season with salt and pepper as desired and serve with a rustic whole grain bread.
