Introduction

Had eggplant. Wanted to try to recreate kind of a sesame chicken but with eggplant. This is what came of it, and it's MIGHTY tasty. The sesame paste and almond butter is to add protein. Ingredients

    Fresh eggplant, 8 cups cubed
    Ketchup, two cups
    Balsamic Vinegar, 8 tbsp
    Red wine vinegar, 8 tbsp
    Onions, raw, .5 cup, chopped
    Ginger Root, 3 tsp
    Garlic powder, 3 tbsp
    Brown Sugar, .5 cup, unpacked
    Raw wild honey, 4 tbsp
    Crushed Red Pepper, 1 tsp
    Pepper, black, .5 tsp
    *paprika, smoked, 1 tsp
    cumin powder, 1 tbsp
    Organic Sesame Tahini, 6 tbsp
    Almond Butter, 2 tbsp
    8 cup cooked brown

Tips

Feel free to revamp to cut the sugar content. I wanted to use crushed tomatoes with no salt added, but we were out, which is why I used ketchup. Do that, and save calories, salt, and sugar. Garnish with fresh sesame seeds before serving if desired.


Directions

Throw everything but the rice into the crockpot. Cook it on high for first hour, and turn it to low for the last two hours. Take whatever time you need to prepare brown rice before serving.

Serving Size: 1 cup eggplant with sauce plus 1 cup brown rice
