Ingredients

    1 LB lean ground beef
    1C green pepper, chopped
    1/4C onion chopped
    1C salsa
    1 cube chicken bullion
    2tbs chili powder
    1tsp ground red pepper
    2C rice
    4C water

Directions

In medium pan brown ground beef over Med High heat, add onion and bell peppers. Cook until veggies are warmed through. In large pot over high heat, add water, rice, salsa, spices and bullion. Stir together, add mixture from pan. When mixture begins to boil, turn heat to low, cover, and let simmer for 20 minutes, or until rice is tender.
Makes 6 1- cup servings

    Very Good
    i've always wanted to learn how to make spanish rice, and this was such an easy recipe. i made it as a side dish to SCAR32's cheesy spinach enchiladas, so i omitted the ground beef; the whole meal was amazing. thank you for sharing! - 4/18/08
