Introduction

Number of Servings: 3

Ingredients

    Red Lentils, 1 cup
    Carrots, raw, 2 medium diced
    Celery, raw, 3 stalk, medium diced
    Brown Onion, raw, 1 large diced
    Chicken stock, 5 cups
    Curry powder, 1 tbsp (your favourite)
    Coriander leaf, fresh, 2 tbsp chopped
    Garlic, 2 clove crushed
    Fresh Ginger Root, 3 tsp grated
    Canned Tomatoes, 400 grams
    1 cinnamon stick
    Pepper to taste
    1 tablespoon of Greek or natural yogurt and fresh coriander to serve.

Tips

Madras curry power is my favourite but you can also use Malaysian curry power and substitute the yogurt for 270mls of coconut milk added once the lentils are cooked. Remember the nutritional values will change though...


Directions

Prepare fresh vegetables and sweat on a low heat. Add the garlic and ginger then curry paste and cinnamon stick. Add the canned tomatoes and chicken stock and bring to a simmer. Add the lentils and cook until the lentils are soft (approx 20 mins) then add chopped coriander. Serve with a dollop of yoghurt and top with chopped fresh coriander.
