Introduction
I was lucky enough to spend a week on one of the Greek islands the summer of 2013 and when I ordered a Greek Salad I was surprised to see there was no lettuce or pepperoni or hot peppers it was just cucumber tomato and onion and sometimes green pepper. It was so much more refreshing than what you get in the states that I needed to make my own version. Ingredients

4 medium red ripe tomatoes - chopped
2 large peeled cucumbers - chopped
1 large red onion - chopped
1 large green bell pepper - chopped
2 cups of Feta - preferably fresh
3 tsp dry oregano
salt - to taste
pepper - to taste
3 tsp lemon juice
3 tbsp olive oil
5 tbsp red wine vinegar
Tips
A traditional Greek salad would also include olives however I do not like them so feel free to add them on the top but remember to count their calories!!
Directions
Chop up the veggies and place them into a bowl, mix in the feta and then mix the spices, lemon juice, vinegar, and olive oil into the salad.
You can alter the vinegar and oil to taste I prefer more vinegar to oil and that might not be to everyone's liking.
Serving Size: makes 6 1 1/2 cup servings - approximately
