Introduction

Number of Servings: 9

Ingredients

    2 bags of California Blend vegetables
    2 boxes of chicken broth
    2 cans Rotel
    10 oz of low Fat Velveeta

Tips

You can use an immersion blender to make a more creamer type soup.


Directions

Bring to boil chicken broth with frozen vegetables and rotel. Simmer until vegetables are soft and tender. Then lower heat and add the low-fat Velveeta. Cut in small diced pieces so to be easy to melt. Then serve.
