Introduction

Ingredients

2 5" long Sweet potato, grated
4 whole large Eggs, or substitute equivalent
0.5 cup shredded Red Onion
1 tsp Garlic powder
1 tsp Garam Masala Indian Spice Mix
4 tbsp. (2 Scoops) Flax Seed, Cold Milled Golden Flax Seed by Flax USA,
Salt, & Black Pepper to taste
Coconut Oil, 1 1tsp for pan
Tips
Add finely chopped apples or raisins for some sweetness. Just remember to add them to your ingredients as they are not part of the recipe calculation.
Directions
Combine all ingredients and let set for a few minutes to allow the ground flax to stiffen up the mix.
On medium heat, melt coconut oil on griddle. Pour out 8 4 inch pancakes (or do 4 at a time in a skillet) and cook until golden brown on both sides, about 4-5 minutes per side. Keep on low heat to allow potatoes to cook without burning.
