Ingredients

    4 cups cooked instant brown rice (Uncle Ben's is best)

    3/4 cup canned black beans, rinsed

    1/2 cup fresh or canned corn

    1/4 cup finely chopped onion

    diced jalapeno to taste

    1 tbs minced fresh cilantro

    1 tbs olive oil

    salt & pepper to taste

    hot sauce on the side, optional

Directions

Cook instant brown rice for 12 minutes as directed on package to make four cups.

Cool slightly, then drizzle with olive oil and season with salt and pepper. Mix in remaining ingredients. Serve as a side dish or a vegetarian main dish.
