Ingredients

    5 zucchini sliced thin
    1 small onion sliced thin
    1 tbs oil
    salt
    Cooking spray
    6 beaten eggs

Directions

Spray 15 1/2 in sheet pan with cooking spray. Then add sliced zucchini, salt , onion,and 1 tbs oil into the sprayed sheet pan. Cook at 425 degrees until zucchini is slightly brown(20 min). Then add 6 well beaten eggs and cook for 20 min more. Cool and cut into 20 squares.
