Ingredients

    Chicken Thighs (skin and bone in)
    Lime Juice (to taste)
    Coconut Milk
    Lemon Pepper (I use Trader Joe's Grinder)
    Garlic Salt or Sea Salt
    Fresh Ground Pepper
    Raw Unsweetened Dried Coconut
    Stevia (4 - 5 Packages)
    Extra Virgin Olive Oil
    Cilantro

Tips

Do not add any artificial ingredients. This is "pure" food.


Directions

Clean Chicken, place between paper towels to dry. Slice Lime(s) into quarters, squeeze over 1 side of the chicken, add all seasonings, sprinkle 1/2 of stevia over the top and pack 1/2 of the raw coconut on each piece. In the meanwhile bring Coconut and Olive oil to heat. Carefully grasp the chicken, turn over in hand and add seasoned side down to pan with oil. Add more lime, seasoning, stevia and coconut to the top. Allow to brown on each side (around 7 minutes each). Once browned add coconut milk and allow to simmer together (uncovered) for the next 45 minutes, turning occasionally. Allow to drain on paper towel and serve hot with sides of your choice.
