Ingredients
-
2 1/2 Tbsp cornstarch, divided
3/4 lb top sirloin steak, trimmed & thinly sliced
2 tsp olive oil
1/2 cup mushrooms, sliced
1/2 cup reduced sodium beef broth
4 cups broccoli florets, uncooked
1/2 tsp ginger
2 cloves garlic, minced
1/4 tsp crushed red pepper flakes
1/4 cup water
1/4 cup lite soy sauce
Salt & pepper, to taste
Directions
1. On a plate, combine 2 Tbsp cornstarch and salt & pepper. Add beef and toss to coat.
2. Heat oil in a large wok over medium-high heat.
Add beef and cook until lightly browned and cooked through, about 4 minutes. Transfer to a bowl with a slotted spoon.
3. Add 1/4 cup broth to pan and stir. Add broccoli, cover and cook, tossing occasionally and sprinkling with a Tbsp water if needed. Cook until broccoli is crisp-tender, about 3 - 4 minutes.
4. Add mushrooms and cook, tossing occasionally about 3 minutes. Add ginger, garlic and red pepper flakes. Cook until garlic becomes fragrant, about 2 minutes.
5. In a cup, stir together water, soy sauce, remaining broth and remaining 1/2 Tbsp cornstarch until blended and stir into pan.
6. Reduce heat to medium-low and bring to a simmer. Simmer until slightly thickened, about 2 minutes.
Return beef to pan. Toss to coat, and serve hot.
