Ingredients

    1.5 c diced russet potatoes
    1.5 c diced carrots
    3/4 c diced onion
    1/2 c raw cashews
    1Tbsp sesame seeds
    4 tsp salt
    2 Tbsp lemon juice
    4 c. water from boiling vegetables
    3 Tbsp earth balance margarine
    4 c. uncooked elbow macaroni
    white pepper to tasts
    dash of cayenne pepper to taste




Directions

Boil potatoes and carrots. Saute onion in margarine. Blend everything together and pour over cooked macaroni. As it cools, it will soak into the noodles and thicken.
