Introduction

Ingredients

1 T canola oil
1 clove garlic, minced
1 medium yellow onion, diced
1 1/2 t chili powder
1 t cumin
12 ounces boneless, skinless chicken breasts, cut into 1" pieces
Juice from 1 lime
1/2 t lime zest
32 ounces (1 quart) low-sodium chicken broth,
1 (14.5 oz) can diced tomatoes
1 (4 oz) can diced green chilis
4 6" soft corn tortillas
1/2 cup reduced-fat sour cream
1 scallion, sliced
1/4 cup reduced-fat shredded cheddar cheese
Directions
1. Preheat slow cooker to high setting. Add the canola oil, onions, garlic, chili powder, and cumin, and allow to cook, uncovered, for 10 minutes until the onions become translucent.
2. Add all remaining ingredients to the crock pot except sour cream, scallions, and cheddar cheese. Stir to combine. Cover, and cook on high heat for about 2 hours, until chicken is cooked through.
3. Add sour cream to mixture and stir to combine. Continue cooking for another 15 minutes until the sour cream is warmed through.
4. Serve, garnished with sliced scallions and cheddar cheese.

I don't know where to start on how poor a recipe this is. I don't think it was ever made in a crock pot.....it's not suitable. Thinking I might be wrong, I tried it and it just doesn't work. Furthermore, all the seasoning is lost in the excessive lime juice. What a waste of time and effort...BAH - 12/19/13
