This easy dish is a breeze to make. I had some leftover rice that we needed to use, so I used what I had on hand and came up with this yummy recipe. Ingredients

    Casserole:
    1 lb. boneless, skinless chicken breast, chopped into bite-sized pieces
    1 1/2 c. white rice, cooked
    1/2 c sliced, fresh mushrooms

    Sauce:
    2 c Silk Original Soymilk
    1 clove garlic
    1/2 c onion, chopped
    6 oz mozzarella cheese, shredded

Tips

The seasoning options are endless. We had fresh rosemary which I chopped and added to the sauce while it simmered, or you can give it a Mexican flare by adding chiles, tomatoes, and cheddar cheese instead of mozzarella. It is quick, easy, and enjoyable any which way.


Directions

Preheat oven to 350. Chop chicken and mushrooms, and combine in a medium bowl with the rice, cayenne pepper and salt. Pour into a 3-qt. casserole.

Place the milk, chopped onion, garlic, salt, and white pepper in a sauce pan and bring to a boil. Simmer 5-7 minutes, or until the milk begins to thicken and the garlic and onion are fragrant. Add the cheese and stir until combined.

Pour the sauce over the casserole ingredients, cover, and place in oven 40-45 minutes, or until sauce is bubbly and chicken is cooked through.
